Green Pea, Marinated Fetta and Freekeh salad
A delicious grain salad with a burst of green peas and mint, finished with creamy marinated fetta.

Ingredients
2 cups freekeh
2 cups frozen peas
2 spring onions, chopped
1 bunch mint
¼ cup chopped pistachios or toasted almonds
350g South Cape Marinated Fetta
juice of 1 lime or lemon
Method
- Place freekeh, 1 litre water and 1 tablespoon salt in a saucepan, bring to the boil and boil for 20 minutes until tender.
- Add peas and simmer 2 minutes. Drain, rinsing briefly, and cool.
- Reserve some mint leaves for garnish, chop the rest and mix into the freekah with the spring onions.
- Gently stir in the South Cape Marinated Fetta, together with its oil, and lime juice.
- Serve garnished with pistachios and mint.
Tips
- Freekeh is an ancient grain made from roasted green wheat. Cracked freekeh will cook quicker than whole grains.
- Farro or brown rice can be substituted, adding a little longer cooking time if needed.
